Sweet and sour, tangy and delicious homemade pork sausages

I had so much fun making these sausages. I made it with some friends and everyone was involved.


I had my inspiration from Belgium. The Belgians use a blend of spices which they call 'speculoos'. Let's just say you can use it on almost everything!

 

How to make these sausages


You will need a sausage maker and make sure all the ingredients are cold. Super cold.

For this recipe I used ginger, cinnamon, star anise, cardamon, cloves, pepper, endive, pork shoulder and smoked pork back fat.


Place your ingredients twice through the machine. It ensures consistency and flavour throughout your sausages. Next, your casings. The type of casings you use, are up to you, but again make sure they are cold and pre-soaked. (it helps slipping them on to the machine)


Once you are done, let your sausages rest. I of course, didn't wait too long and had them straight on the fire!
